Schön mürbe mit feinem Aroma.
Ich kann mich ja gar nicht entscheiden, welche Plätzchen ich backen soll. Das Internet und sämtliche Kochzeitschriften überschlagen sich mit Rezepten für Plätzchen, Stollen und Pralinen. Ich fange erst mal mit den einfacheren Rezepte an, da ich beim Backen nicht unbedingt die geduldigste bin und mich bis Weihnachten unbedingt steigern möchte. Kekse backe ich das ganze Jahr über und Heidesand habe ich schon in allen Variationen gemacht, mit Marzipan und Hagelzucker, mal mit und mal ohne Ei. Dieses Rezept mit Rosmarin gab es in der November-Ausgabe von “essen & trinken” und wollte ich wegen der versprochenen Aromen unbedingt nachbacken.
Zutaten für ca. 40 Plätzchen:
• 200 g Butter
• 230 g Zucker
• 1 Pk. Bourbon-Vanillezucker
• TL Salz
• 1 Ei
• 2 Zweige Rosmarin
• 320 g Mehl
• Bio-Zitrone
1. Die Butter, 180 g Zucker, Vanillzucker, Salz und Ei cremig rühren.
2. Die Rosmarinnadeln mittelfein hacken. Das Mehl sieben und schnell mit den Rosmarinnadeln unter den Teig mischen. Zu einer Kugel formen, in Folie wickeln und für 30 Minuten im Kühlschrank ruhen lassen.
3. Den Teig halbieren und zu zwei 40 cm lange Rollen formen.
4. Den restlichen Zucker mit der fein abgeriebenen Zitronenschale mischen und die Teigrollen darin wälzen. Dann für weitere 2 Stunden in den Kühlschrank stellen.
5. Die Teigrollen in 1 cm dicke Scheiben schneiden und auf ein mit Backblech ausgelegtes Blech legen - etwas Abstand halten. Im vorgeheizten Ofen (200 Grad, Umluft 180 Grad) 12 - 15 Minuten goldbraun backen.
Fazit: Die Plätzchen sind schön mürbe und schmecken lecker. Das versprochene Aroma ist auch vorhanden, könnte nach meinem Geschmack aber etwas stärker sein, d.h. beim nächsten Mal nehm’ ich mehr Rosmarin. Mir fehlt aber der weihnachtliche Touch und darum gibt es die Kekse erst wieder in Richtung Frühling…
